Girondins monument
Not a lot of people know this, and I am risking a great deal by sharing the secret with you, but the Girondins monument has a hidden meaning. (Maybe that's why it was hidden so well during the Nazi occupation that it wasn't found again till the mid-50s.)
Anyway, the hidden meaning is a culinary secret - when cooking horse with cabbage it is important to keep the cabbage moist during cooking, but above all (and see the power of the imagery) to add a large sprig of bay leaves.
