Pat is thoroughly contextualised now
This is her third oyster. She tells me it is rather like chewing the sea.These are Arcachon oysters, n°1, which is important. At Arcachon oysters are bred to send all over France for growing on and fattening up. As they get bigger they become less translucent and more bitter. Some people like the bitter taste, but more generally the young, small n°1 oysters are preferred.
